Loaded Cauli Bake

Steam 80 grams of cauliflower and grind it up in a food processor.

Once cooled, squeeze small portions of the cauliflower in a cheese cloth to get out as much water as you can.

Cube and season 1/2 chicken breast and sautee in 1 TB of olive oil until tender.

Blend the cauliflower with:

20 grams of sour cream
1/4 cup of cheese (I used Gouda)
1 slice of bacon crumbled
1 green onion chopped
1 TB of butter softened
1/8 tsp of garlic powder

Return cauliflower to your food processor and blend with all ingredients except chicken.

Fold in the chicken and turn out into a pan and top with grated cheese. Bake at 275 until top is golden brown.
